CHEESE PIE

- Preheat oven to 350 degrees F.
- Use an 8” pie plate

2 bricks of Philadelphia cream cheese (8oz)
1 tsp. vanilla
3 eggs
2/3 cups of sugar
1/2 pint of sour cream
1 tbs. cinnamon

- With an electric mixer combine cream cheese, sugar, and vanilla.

- Add one egg at a time beating well after each addition.

- Bake at 350 degrees for 30 minutes – let it sit out of the oven for at least 10 minutes.

- Mix 1/2 pint of sour cream with 2 tbs. sugar.

- Spread mixture on top of pie and bake for 10 more minutes.

- Sprinkle with cinnamon and let cool completely in the refrigerator for at least 3 hours (overnight is best).
APPLE POUND CAKE

Makes 12 to 16 servings

Apple Pound Cake Makes 12 to 16 servings

Vegetable oil and flour for the pan.
3 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 cups corn oil
2 cups sugar
2 teaspoons vanilla
3 med. Apples, peeled, cored 7 shredded (about 2 cups)
1 cup finely chopped pecans
1/2 cup butter
1/2 cup firmly packed lt. brown sugar
2 tsps. Milk

- Grease a 10 inch bundt or tube pan. Dust with flour, shaking out excess. Preheat oven to 325 degrees (at least for 1⁄2 hour).

- Combine the flour, baking soda, salt and cinnamon.

- In a bowl, mix the corn oil, sugar, eggs and vanilla.

- With an electric mixer at medium speed, slowly beat the flour mixture into the oil mixture, beating until smooth. Fold in the apples and pecans.

- Pour batter into prepared pan. Bake for 1 hour and 20 minutes. Cool in pan on wire rack for 20 minutes.

- Meanwhile, bring butter, brown sugar and milk to a boil in a saucepan. Boil for 2 minutes.

- Loosen cake from edges of pan with a knife and turn it out onto rack. Spoon hot sugar mixture over warm cake, letting it run down sides. Let cool completely before serving.

- Store in an airtight container in refrigerator.
 
SOUR CREAM CHOCOLATE CHIP CAKE

1 1/2 cups sugar
2 cups flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 1/2 tsp. baking powder
2 sticks butter, softened
1 tsp. vanilla
8 oz. sour cream
2 eggs
1 large bag chocolate chips - Preheat oven to 350 degrees for at least 1/2 hour.

- Mix 1⁄2 cup of sugar and all of cinnamon in a small bowl and set aside for topping.

- Cream butter well then add vanilla, sour cream, eggs and sugar-mix well.

- Add dry ingredients, soda, powder and flour.

- Mix well until smooth…it will be very thick.

- Spread half of batter in un-greased 9x13 in. pan.

- Sprinkle with 1/2 of cinnamon and sugar mixture then half of the bag of chocolate chips.

- Lightly press chips into the batter.

- Carefully spread remaining batter on top of other. Try not to get it all mushed up.

- Sprinkle remaining chips on and then the remaining cinnamon and sugar mix.

- Bake for 30-35 minutes. Check with toothpick at 30 minutes for doneness.

- Wait until it cools to cut into squares.
